Gluten Free Shrimp or Chicken Fried Rice

Last week, I read an article about how for some people, eating foods with gluten can really be a problem which made me reflect back on my child hood and my stomach now. I used to always go to the doctor’s when I was younger because I always used to get stomach aches and vomit— trust me, it wasn’t on purpose. After eating, my stomach seemed like it used to just reject foods and it didn’t matter what it was. The physician used to always tell my mom to keep a food diary to try to pin point what was making me so sick all the time, but it was always something different.

As I got older, I stopped having as many problems, but I also learned to not eat certain foods. Like I stay away from multi grain or whole wheat foods because those definitely make me sick, but I didn’t think I have ever had issues with white bread or other products that might contain some wheat. After reading the article, I realized that maybe I had a gluten allergy and no one knew. Back in the day, certain things weren’t talked about or known as much and maybe gluten allergies are one of those things. Also after reading the gluten article, I’m very excited to start making more gluten free meals.

My best friend made fried rice last night that was really good and sent me the recipe that she got from familysavvy.com. I decided to make a gluten free variation of it because of these new revelations. I hope you enjoy.

Ingredients:

  • 6 cups cooked rice (the recipe asked to cook ahead and refrigerate it but it turned out just fine without cooking it ahead the night before)
  • 1 teaspoon mustard
  • salt and pepper to taste
  • 4 cloves of minced garlic
  • 2 tablespoons fresh ginger
  • 1 tablespoon of honey (the recipe asked for molasses but I didn’t have it- if you want to use it molasses is gluten free!)
  • 3 tablespoons gluten free soy sauce (regular soy sauce has gluten so remember to get the gluten free bottle)
  • 3 eggs lightly beaten
  • 1/4 cup sesame oil
  • 1/2 pound shrimp or chicken (or as much as you like)
  • 1 cup diced carrots and onions (you can throw in other vegetables that you like too)

Directions:

  • In a small bowl, stir in mustard, soy sauce, and honey and set aside.
  • Spray stir fry pan with cooking spray on medium heat
  • Add garlic and ginger to pan and saute for 2 minutes then add it to the small bowl mixture
  • Spray pan with more cooking spring and add your meat (chicken or shrimp) to pan and saute until cooked through.
  • Remove meat from pan, spray with more cooking spray then add egg to the pan and lightly scramble. Sprinkle salt and pepped
  • Remove egg from pan, chop into small piece and set aside
  • Add sesame oil to pan and heat on medium high
  • Saute onions, carrots and vegetables of choice for 2-3 minutes or until tender
  • Add rice, egg, meat and mix together then pour soy sauce mixture over rice and mix together.
  • Stir fry for 1-2 more minutes until heated throughout.

Yummy!
